208/366: Spicy Pickled Green Beans on Flickr.
First attempt at pickling—decided to try some spicy green beans. Recipe was something like:
Pickling mixture: vinegar, water, pickling salt
Spices: Clove of garlic, 1/2 tsp dill seed, 1/2 tsp mustard seed, 1/2 tsp peppercorn, 1 dried chile de arbol, 1 fresh red chili (not sure what kind, not too hot)
All the lids have popped so we will see how they are in a few weeks.

Fischer played a baseball game today. Tonight we went over to a friend’s place where they were having a crawfish boil. Sophie is still in NYC. The sunset was vibrant reds and oranges due to all of the forrest fires in the mountains at the moment. Tonight we also took a little walk around the block with Penny and the boys (Sam riding a scooter and Fischer his bike).

Jocie laid out an amazing spread (ironic considering we both are eating a low carb diet). We had some friends that are leaving for Houston and so we through a little going away party that was also a baby shower and St. Patrick’s day party all in one. Sammy had a socer game today and scored two great goals. Sophie gave Penny a bath today and also did some baby sitting later in the evening.

I figure since I eat my breakfast there every day for the last couple of years they deserve the plug (sausage egg mcmuffin sans the bread with a diet coke—low carb, not paleo, bad robot).
Crispy Cauliflower with Flap Steak, a set on Flickr.
Crispy Cauliflower:
~ 1 head of cauliflower cut into small pieces
~ 1-2 strips of thick cut bacon cut into small pieces
~ 2 tbsp each of shallots, kalamata olives, sun dried tomatoes, and pine nuts (all chopped fine except nuts)
~ 1-2 Tbsp balsamic vinegar (to preference)
~ 2 Tbsp olive oil
~ Salt, Pepper, Tony Cachere’s (to taste)
Cook the bacon pieces first until golden brown, remove and place on paper towel while reserving two Tbsp of bacon grease. Cook the cauliflower in the reserved bacon grease covered for 5 minutes adding salt, pepper, and Tony Cachere’s to taste. Stir occasionally. Then add the shallots and pine nuts and cook 5 more minutes uncovered. Cauliflower and pine nuts should be golden brown. Finally, add two Tbsp of olive oil, 1-2 Tbsp balsamic vinegar, sun dried tomatoes, and olives. Serve immediately.
